Peanut Butter Chocolate Chip Cookie Dough!!

The best part of making cookies is the cookie dough, and let me tell you it was hard to keep myself from eating all of it. They baked up to be fantastic cookies too. My husband’s favorite cookie is the peanut butter cookie, and mine (if I had to choose) would be the chocolate chip cookie. So this cookie is the best of both worlds for us. Soft, and lightly chewy with a gush of ooey gooey chocolate with every bite.   HEAVEN!!!

This recipe was amazing. I will be saving this one for the heirloom cookbook for my family for sure. I made two and a half dozen cookies from this recipe, which only filled my cookie jar half full.  Of course, I had to try them as soon as they were done baking to make sure they were still amazing, and they were. So about two dozen made it into the cookie jar.

So here is what you need:

1 1/4 cups flour

1/2 cup firmly packed light brown sugar

3/4 cup white granulated sugar

1/2 cup butter softened (1 stick)

1 large egg ( at room temp)

1/4 tsp salt

1 tsp Vanilla Extract

1 Tbsp whole milk

1/2 tsp Baking soda

3/4 tsp Baking Powder

1 cup peanut butter

1/2 cup chocolate chips

Here is what to do:

Preheat oven to 350 degrees F. In a large mixing bowl beat the peanut butter and butter until smooth. Next add the sugars and mix well. Beat in the large egg then add the vanilla extract and milk then set aside. Sift flour and baking powders together and add to wet mix. Mix well then gently mix in chocolate chips. Scoop into balls and roll in sugar and place 12 to a baking sheet. Gently press down cookie balls with a fork diagonally and place in oven. Bake at 350 for ten to twelve minutes. cookies might appear to be undone but trust me they are done. Let cool on a wire rack. ENJOY!!

Homemade Bit O’ Honey Candies

Do you remember Bit O’ Honey? The peanut butter and honey lightly crunchy candies. They were good! I don’t even know if they make them anymore. I rarely visit the candy aisle these days. I used to love them!

My husband loves peanut butter so these are gonna go fast.  I start with one jar of creamy peanut butter, and one cup of honey. Put it in a microwaveable bowl and nuke for one minute.  The peanut butter will become liquid I then added 2 teaspoons almond extract and mixed it in.  I then mixed 4 cups dry milk powder. I thought it was too dry so I added another half cup honey and half a jar of chunky peanut butter. Then I microwaved it all one more time for a minute to make sure the peanut butter was melted again and mixed, and it was perfect.  It will look like this:          YUMMY!SAM_0984

The recipe I found online used 1/2 cup creamy peanut butter 1/2 cup honey and 2 cups dry milk powder, but I wanted to make a lot more so I just winged it! I have made them before so I know about how the consistency should look.

So all in all, my recipe is as follows: Makes about 60 wrapped candies

1 jar (18oz) creamy peanut butter

1/2 jar (18oz) chunky peanut butter

1 1/2 cups honey

4 cups dry milk powder

2 teaspoons almond extract

I then put the mix on a parchment lined sheet pan and evenly spread it out with a spatula.  Place it in the freezer for a few minutes to take the heat out and it will firm up a bit. Then cut it up, and wrap it. That easy for great healthy candy or an energy boosting snack.SAM_0985SAM_0987SAM_0988SAM_0989

Cut parchment paper to fit your candies and wrap. If you have kids they will have so much fun with this step. Mine love to help! Easy and fun and simple! Hope you enjoy making them!bohc

Peanut Butter Iced Banana Bread

Peanut Butter and Bananas a great combination for any snack. Peanut butter is a must have (at all times) in my house.  My husband loves his peanut butter, he puts it on everything from saltines to ice cream. So this bread never last long in our house.

My one year old is just starting to eat peanut butter, and I think she will share the same passion as he father.  She loves this banana bread although, I don’t let her have very much of the icing because there is to much sugar in it.  None goes to waste with either of them.  I am not as big a fan of peanut butter.  I don’t know why but, I can only get into it when I am in the mood.  I do love this bread though, I could eat it anytime.   I think you will feel the same way. Enjoy!

Banana Bread:

6 very ripe bananas

2 sticks salted butter softened

1 1/2 cups sugar

1 Tbsp Vanilla extract

2 tsp Baking powder

1/2 tsp Baking Soda

1/2 cup Buttermilk

3 eggs

Peanut Butter Icing:

2 Tbsp Peanut Butter

2 Tbsp (maybe more if needed) Heavy Cream or Milk

2 cups Powdered Sugar

Preheat oven to 350 degrees F.  Start by mixing butter, sugar, Vanilla, eggs, buttermilk, and mashed bananas together with a wooden spoon.  Then add all your dry ingredients, mix with a wooden spoon.  Break out the electric mixer and mix it until nice a smooth.  Grease two loaf pans. Evenly distribute into pans.  Place loaf pans in the oven and turn down heat after 10 minutes to 325 degrees F.  Let bake for one hour and check the center with a toothpick when it comes out clean they are done.
